Caramelized Onion Tart with Green Apples
Ingredients
- 3 Onions sliced thinly
- 2 tablespoons butter
- salt and pepper to taste
- 8 ounces goat cheese at room temperature
- 1 tablespoon butter
- 1 green apple
- 1/2 teaspoon black pepper
- 1 sheet frozen puff pastry defrosted
- 1 tablespoon fresh thyme
- parsley to garnish
Instructions
- To caramelize onions, add 2 tablespoons butter to a cast iron pan or dutch oven and add onions. Cook low and slow until onions are nicely browned and caramelized, about 30 - 40 minutes. - Preheat the oven to 375F. Line a baking sheet with parchment paper.
- Place room temperature goat cheese in a medium bowl and add black pepper. Mix until goat cheese is a spreadable consistency.
- Peel and thinly slice one green apple. Melt butter in a medium pan and sauté 3 - 4 minutes until lightly browned but still al dente. Let cool.
- Place one sheet of defrosted puff pastry on the baking sheet. Spread goat cheese mixture on the pastry leaving 1/2-inch border all around the edges.
- Top goat cheese with caramelized onions. Try to spread as evenly as possible and then place green apples on top.
- Sprinkle with fresh thyme and bake until crust is golden brown - approximately 20 - 25 minutes.
- Serve warm or at room temperature.
