Bacon Cheeseburger with Caramelized Onions
Ingredients
- Caramelized Onions:
- 2 large Onions thinly sliced
- 2 tablespoons Butter
- Salt to taste
- Burgers:
- 1 1/2 Ground Beef (we used 85/15)
- 2 tablespoons Worcestershire sauce
- 4 Rolls (we used brioche)
- 4 slices Gouda cheese
- 8 slices Bacon
- 1 1/2 cups Arugula
- Salt and Pepper to taste
Instructions
- Pull out the bacon from the fridge 15 to 20 minutes before cooking. At room temperature, bacon just cooks up better
- Don't preheat the skillet. Lay out the bacon strips without overlapping in a cold pan. This helps the fat render slowly, for consistently cooked strips.
- Cook over medium heat turning the strips as needed until they reach the desired crispness, 8 to 12 minutes. Drain well on a paper-towel-lined platter and set aside.
- While bacon is frying, caramelize onions by melting butter in a cast iron pan or dutch oven. Cook low and slow over a low to medium heat for 30 to 40 minutes. - Combine ground beef, Worcestershire sauce, parsley, salt and pepper using your hands being careful to not over mix.
- Divide into 4 even sized patties. Place a thumbprint in the center of each patty for even grilling.
- Preheat the grill. Place burgers on grill over a medium high heat and frill on each side for approximately 5 minutes.
- Prior to the burger being fully cooked on second side, place a slice of gouda on each burger.
- Once cheese is melted remove from grill.
- If you wish to grill the buns, place on the grill for 1 - 3 minutes until lightly toasted.
- Place 1 burger on each roll. Top with caramelized onions, 2 bacon strips and arugula. Top with the bun and enjoy!
