This strawberry coffee cake is simple to make and only requires berries along with several staple / pantry ingredients. Perfect for breakfast with a cup of coffee or serve at a spring or summertime brunch. This cake is soft, light, not too sweet and is bursting with fresh strawberry flavor. The streusel topping finishes it off perfectly and definitely makes this dessert company worthy.
Strawberry Coffee Cake
Ingredients
- For Cake:
- 1/4 cup butter
- 3/4 cup white sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 2 teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 cups strawberries thinly sliced
- For topping:
- 1/2 cup all-purpose flour
- 1/4 cup white sugar
- 1/4 brown sugar
- 1/4 cup butter
- 1/2 teaspoon cinnamon to sprinkle on top once baked
Instructions
- Preheat oven to 350 degrees F.
- Grease a 9-inch baking pan. (We used a 7 by 10 and it worked out perfectly).
- Beat 1/4 cup butter in a large bowl until creamy.
- Add vanilla, 3/4 cup white sugar and egg then beat until fully incorporated.
- In a separate bowl, mix 1 1/2 cup flour, baking powder, and salt together.
- Stir flour mixture alternating with the milk into the butter mixture. Stir until blended together.
- Pour batter into the greased pan.
- Arrange sliced strawberries to the top of the batter.
- For the topping, mix together the 1/4 cup white sugar, brown sugar, 1/4 cup butter and 1/2 cup flour. Sprinkle topping over strawberries and batter.
- Bake 30 - 35 minutes or until a toothpick placed in the center of the cake comes out clean.
- Sprinkle cinnamon over the top.
- Serve and enjoy!
