Fried Ice Cream with Debbie Smeatham

Fried Ice Cream with Debbie Smeatham

Ingredients

  • 6 Cups Cornflakes crushed
  • 1/2 Cup sugar
  • 2 Tablespoons Cinnamon
  • 1 Stick Salted Butter
  • 1/2 Gallon favorite Vanilla Ice Cream softened
  • 8 oz. Cool Whip softened
  • 2 Teaspoons Vanilla

Instructions

  1. Remove ice cream and cool whip from freezer to soften. We removed from freezer and placed in the fridge for 1 1/2 to 2 hours prior to beginning.
  2. Place cornflakes in a Ziploc bag, and crush with rolling pin.
  3. Add sugar and 1/2 of the cinnamon to the cornflakes and mix well.
  4. Melt butter in a large frying pan. Once melted, add cornflakes mixture and brown. This will take approximately 8 - 10 minutes.
  5. Mix softened ice cream and cool whip together with remaining cinnamon and vanilla.
  6. In a 9 X 13 pan, pour half the cornflakes mixture into the bottom and press firmly to make a crust.
  7. Pour ice cream mixture on top of cornflake crust.
  8. Sprinkle remaining half of cornflake mixture on top of ice cream.
  9. Place in freezer for at least 4 hours before serving.
  10. Once hardened, drizzle with your favorite caramel and chocolate syrups.
  11. Serve and enjoy!
