Caramelized Onion Tart with Green Apples

Caramelized Onion and Goat Cheese Tart with Green Apples and Thyme has a flaky, buttery crust, caramelized onions, tangy goat cheese, tart green apple and fresh thyme. It’s a scrumptious dish you can serve as an appetizer or as part of a light supper when paired with a fresh green salad.

This recipe calls or a few simple ingredients with a couple of pantry items. Frozen puff pastry dough is a cook’s best friend, always a crowd-pleaser that cooks to flaky perfection in minutes.

The caramelized onions do take a little time, but pretty much the cooking method is almost always fool proof. and are always worth the wait. Ingredients:

First, caramelize the onions. You can do this the traditional way, by adding butter or olive oil and onions to a cast iron pan or dutch oven and cook low and slow until onions are a deep brown.  Also, if you have planned ahead of time, you can slow cook in the crockpot for 10 – 14 hours. Either way works.

We wanted to make other recipes using caramelized onions, so we made a large batch in the crock pot. You can see what we did here.

Once you caramelize the onions, set aside to cool. Preheat the oven to 375F and line a baking sheet with parchment paper.

Thinly slice one green apple. Melt butter and sauté onions for 4 – 5 minutes. You do not want to overcook the apples because you are looking for an al dente texture here.

Allow the apples to cool.

Add room temperature goat cheese to a medium bowl and add the black pepper. Combine until the cheese has a spreadable consistency.

Place defrosted puff pastry on the baking sheet. You can roll out the pastry dough a little bit, but you do not want to roll too thin, because the pastry will need to hold the cheese onions and apples. Spead the cheese all over the pastry dough leaving 1/2-inch border all the way around.

Remove the thyme leaves from the woody stems and set aside.

 

Layer the onions over the cheese, and then place the apples over the top of the onions. Sprinkle fresh thyme over the top.

Bake in the oven for approximately 20 – 25 minutes. You want the crust to be a nice light golden brown.

Using a pizza cutter, slice the tart into the size and shape pieces you are looking for and place on a platter. These are perfect either served warm or at room temperature. Always a crowd pleaser!

Ingredients

  • 3 Onions sliced thinly
  • 2 tablespoons butter
  • salt and pepper to taste
  • 8 ounces goat cheese at room temperature
  • 1 tablespoon butter
  • 1 green apple
  • 1/2 teaspoon black pepper
  • 1 sheet frozen puff pastry defrosted
  • 1 tablespoon fresh thyme
  • parsley to garnish

Instructions

  1. To caramelize onions, add 2 tablespoons butter to a cast iron pan or dutch oven and add onions. Cook low and slow until onions are nicely browned and caramelized, about 30 - 40 minutes.   2. Preheat the oven to 375F. Line a baking sheet with parchment paper.
  3. Place room temperature goat cheese in a medium bowl and add black pepper. Mix until goat cheese is a spreadable consistency.
  4. Peel and thinly slice one green apple. Melt butter in a medium pan and sauté 3 - 4 minutes until lightly browned but still al dente. Let cool.
  5. Place one sheet of defrosted puff pastry on the baking sheet. Spread goat cheese mixture on the pastry leaving 1/2-inch border all around the edges.
  6. Top goat cheese with caramelized onions. Try to spread as evenly as possible and then place green apples on top.
  7. Sprinkle with fresh thyme and bake until crust is golden brown - approximately 20 - 25 minutes.
  8. Serve warm or at room temperature.
